Cheflines is a Sydney based consulting and catering business led by RJ Lines, with over 25 years experience in the hospitalty industry, including owning and operating his own award winning restaurant, RJ brings hands on expertise with a grounded, passionate approach to every project. Cheflines offers tailored hospitality solutions across consulting, catering and private dining.

RJ Lines

RJ Lines is a chef, consultant, and former restaurateur with over 25 years of experience in the hospitality industry. Best known for owning One Penny Red and Vernon’s Bar in Summer Hill, RJ led the acclaimed venue for a decade, earning a coveted Chef’s Hat from 2019 to 2023.

Celebrated for his comforting yet refined food, RJ has a deep respect for seasonal, sustainable ingredients and ethically sourced produce. His humble, produce-driven approach has resonated with diners and critics alike, with One Penny Red regularly featured in the Delicious 100 and praised for its “Trust the Chef” menu and cellar-raiding wine events.

RJ’s culinary journey began in the late '90s and took shape in some of Sydney’s top kitchens, including Longrain under Martin Boetz and Glebe Point Diner alongside Alex Kearns. He went on to develop and launch a successful catering and takeaway offering within One Penny Red, showcasing his ability to adapt and evolve.

Now focused on consulting, RJ helps hospitality businesses streamline kitchen operations, refine menus, and build strong, capable teams. Whether he’s cooking over fire, advising restaurants, or mentoring chefs, RJ brings grounded leadership, genuine passion, and a belief that good food starts with good relationships.

Liz Lines

Liz began her culinary journey in 2012 under RJ’s mentorship at Neutral Bay Diner, later sharpening her pastry skills at Garfish Manly. In 2014, she joined RJ again to open One Penny Red and Vernon’s Bar. A 2016 Electrolux Appetite for Excellence finalist, Liz became sous chef at Poly (Ester Group) in 2018, where she mastered fire-based cooking, smoking, and curing. Since 2020, she’s been instrumental in One Penny Red’s catering pivot and now serves as sous chef at Kearns Food, blending her love for baking, bread, and tailored events.

Cheflines catering has evolved from Rj’s acclaimed catering and takeaway offerings at One Penny Red since 2020 . From intimate gatherings to milestone events, Cheflines delivers food that is delicious, thoughtful and ethical with a focus on seasonal, premium produce. Every menu and event is tailored to suit your vision and needs.
